There are still a lot of restaurants out there that don’t make their own salad dressing, and there is no reason to do that. Even if you’re making your own dressing, keep it in the refrigerator and use it within a week. It will always be fresher if you use it quickly. You can also make a great dressing for the salad by stirring together a simple mix of olive oil, vinegar, salt, pepper, and basil. The dressing will last for weeks.

There are a lot of people who complain about the cost of buying their own salads. If your salad dressing costs more than your own, you got to realize that you are wasting money on a non-renewable resource. When I was a young chef, I would spend a lot of my time making and testing new recipes. In most cases, I made salads that were more expensive than they would have been if I had made them myself.
